One of my go-to meals during the week is pulled pork in the crock pot, it's simple quick, and so freaking tasty. I use this pork for Salads, Enchiladas, and this week LOADED NACHOS!

Pulled Pork
Ingredients:
1 (1.5-2 lb.) pork tenderloin
2 Tblsp minced Garlic
1 medium white onion, sliced
2 jalapeno peppers, seeded & diced
2 Serrano peppers, sedded & diced
1 cup chicken broth
2 teaspoons chili powder
1 teaspoon cumin
1 teaspoon salt
1/2 teaspoon pepper
Directions: Add sliced onions, chicken broth, jalapeños, and serranos to the bottom of the crock pot, next place pork in crock pot and sprinkle evenly with remaining ingredients. Cook on high heat for 3 hrs until pork pulls apart easily, time may vary depending on your crock pot. When pork is done, adjust seasoning if needed, shred and use as needed!
