Vanilla Orange “Cheesecake”

CRUST:

1 cup cashews, soaked

½ cup almonds, soaked

½ cup shredded coconut

¼ cup coconut oil

1 orange, juice and zest

1/8 tsp salt

FILLING:

1 ½ cup cashews, soaked

½ cup coconut oil

1 ¼ cup coconut cream (make sure to drain excess water off top of can)

2 oranges, juice and zest

1 vanilla bean, seeds

CRUST:

Drain water from soaked nuts, combine all crust ingredients in food processor and blend until texture of course sand. Line an 8” spring form pan with parchment paper. Press crust batter into bottom of pan and set into fridge to set.

FILLING:

Drain water from soaked nuts, combine all filling ingredients in food processor and blend until silky-smooth. Pour filling into pan with hardened crust, place in freezer for at least two hours to set fully. 2 hours before serving, move dessert to counter. Decorate top with any fresh fruit or nuts, ENJOY!

*I soaked the nuts overnight, and added just enough water to cover the top.
