Fresh Salsa
Ingredients:
1 large Red Bell Pepper, diced
1/2 pound Cherry Tomatoes, halved
1 Avocado, seeded & diced
1 Ripe Mango, peeled & cubed (I LOVE mango, so I usually use 1 1/2 Mangos)
1 - 14.5 oz. can Sweet Corn Kernels, drained
1 - 15 oz. can Black Beans, drained & rinsed
Juice of 4 small Limes
2 Tblsp. Olive Oil
1/4 cup fresh Cilantro, finely chopped
1/2 tsp. Salt
1/4 tsp. Pepper
Directions:
This part is hard... Throw all of your ingredients in a large bowl and mix. Dish up and enjoy! This recipe like most salsas tastes even better the next day, so feel free to make ahead of time. The lime juice will keep the avocado from browning, so no worries!
This photo shows a version I made with red onion, but it was a little too overpowering, so I have opted to leave it out. Feel free to add if you like!
