Dark Chocolate Guinness Pie with Pretzel Crust

Dark Chocolate Guinness Pie with Pretzel Crust

3 cups Pretzel Sticks, crushed

10 Tbsp. + ½ Tbsp Butter, unsalted

¼ tsp. Kosher Salt

8oz. Guinness Beer

1 ¼ cups Heavy Cream

5 Egg Yolks

¾ cup Sugar, granulated

6oz. Dark Chocolate ( I use 60%)

¼ cup Corn Starch

1 cup Heavy Cream + 3 Tbsp. powdered sugar (for topping)

Preheat oven to 350° F. In a 9inch pie dish rub ½ Tbsp. of butter around base and edges until coated. Melt 10 Tbsp. of butter; in a food processor combine pretzels, melted butter, and ¼ tsp. kosher salt, blend until it just comes together, you will have a few chunks of pretzel, but none should be bigger than pea size. Take pretzel out of food processor and press into buttered pie dish, making sure to evenly coat bottom and sides. Place pretzel crust in oven and bake at 350° F for 10 minutes, pull out, and let cool on top of stove.

In a heavy sauce pan combine Guinness and Heavy Cream, on medium heat warm mixture until just before boiling, stirring occasionally. While Guinness mixture is heating, grab a large mixing bowl, add egg yolks and sugar and whisk until combined. When Guinness mixture is hot, remove from heat and add your dark chocolate and mix until combined. Pour Chocolate/Guinness mixture into bowl with egg yolks in a slow steady stream, whisking as you add. Whisk in cornstarch, return entire mixture to back to sauce pan and heat on medium to medium-low heat. You will need to watch carefully and whisk continuously so that mixture does not curdle. Mixture will thicken to pudding like consistency, about 5 minutes. Pour Chocolate mixture into the pretzel crust you made earlier, put in refrigerator and allow to set, about 1 hour.

After pie has set and cooled, whip 1 cup of heavy cream to soft peaks, add in 3 Tbsp. of powdered sugar and top your pie. You can also add melted chocolate or chocolate shavings depending on how ambitious you feel!
